This family-run Bay Shore brewery stands out for its rare 1983 Peter Austin open fermentation system—one of only 74 built in the U.S.—and a deliberate focus on classic European styles that most microbreweries have abandoned. Expect traditional Franconian Kellerbiers, Belgian Saisons, and Berliner Weisse alongside a rotating single-hop IPA series, all brewed with old-world technique and zero shortcuts (never filtered, never fined). The clean, modern taproom also pours cocktails made with spirits from Better Man Distillery in Patchogue. A refreshing alternative to the hazy IPA hype machine.
